Weekend Recipe: Vegetarian Pasties
Hi everyone here is this week's weekend recipe brought to you by Instagram!
This week I am cooking vegetarian pasties or pastry squares. See the recipe below and enjoy!
6 sheets of puff pastry- room temperature
a tin of lentils (Sanitarium is best!)
3 potatoes- cooked and mashed well with a tbsp of butter
1.5 cups of mixed frozen vegetables- cooked
1 cup of frozen spinach- cooked
2 tablespoons of tomato paste
pepper and herbs if you like
3 tablespoons of plain flour
milk or egg wash for the top of pastry
oven needs to be at 200 degrees Celsius or 392 Fahrenheit
make sure pastry is thawed so it is easier to cut
cook onion in some olive oil until brown
add tinned lentils, tomato paste and mashed potato and stir well
add the cooked spinach and cooked vegetables to the mix
add the flour one tablespoon at a time to make sure all ingredients are well combined and not runny
spoon small amounts into each square of pastry and fold each edge into the middle
place onto a lined baking tray and wash with either milk or egg wash
place into over for 20-25 minutes or until golden brown
